Mexican Chipotle Chicken & Bean Salad

Ingredients
  

Base
  • 2 chicken breasts
  • 1 can black beans
  • 1 small can sweet corn
  • 1 avocado
  • 2 cups red cabbage shredded
  • 1 large red bell pepper
  • 50 g white (shepherd's) cheese
  • tortilla chips optional
  • taco seasoning
  • salt and pepper
Chipotle Dressing
  • 4 tbsp olive oil
  • 2 tbsp vinegar
  • 1 garlic clove
  • 2 tbsp honey
  • 1 pc chipotle chili in adobo sauce
  • 1 tsp oregano
  • salt and pepper

Method
 

  1. Cut the chicken into small pieces, season with taco seasoning and salt and cook in 1 tbsp oil. Set aside.
  2. Shred the red cabbage, cut peppers into small pieces and avocado to slices. Put everything into a large bowl, then mix in the drained corn and beans.
  3. For the dressing, mix all wet ingredients with a blender.
  4. Add the chicken into the bowl, then pour the dressing into the mix.
  5. Sprinkle with white cheese and serve with tortilla chips.
