Method
- Cut the chicken into small pieces, season with taco seasoning and salt and cook in 1 tbsp oil. Set aside.
- Shred the red cabbage, cut peppers into small pieces and avocado to slices. Put everything into a large bowl, then mix in the drained corn and beans.
- For the dressing, mix all wet ingredients with a blender.
- Add the chicken into the bowl, then pour the dressing into the mix.
- Sprinkle with white cheese and serve with tortilla chips.
