Method
- Wash the potatoes and cut them into medium-sized pieces with the skin on. Cook them until done (15-20 mins).
- Let them cool down naturally or rinse with cold water.
- Chop the rest of the ingredients and add to the potatoes with the drained beans.
- Whisk the dressing ingredients together and pour over the salad.
- Season to taste with salt, pepper and more vinegar if needed.
