High Protein Potato Salad

Ingredients
  

For the base
  • 600 g potatoes
  • 1 can white beans
  • 2 pcs spring onions
  • 4 pcs pickles
  • 2 eggs hard boiled
Dressing
  • 200 g plain yogurt
  • 2 tbsp mustard
  • 4 tbsp lemon juice or vinegar
  • salt
  • pepper

Method
 

  1. Wash the potatoes and cut them into medium-sized pieces with the skin on. Cook them until done (15-20 mins).
  2. Let them cool down naturally or rinse with cold water.
  3. Chop the rest of the ingredients and add to the potatoes with the drained beans.
  4. Whisk the dressing ingredients together and pour over the salad.
  5. Season to taste with salt, pepper and more vinegar if needed.
