5-Ingredient Banana Loaf

Ingredients
  

  • 3 medium ripe bananas
  • 2 large eggs
  • 1/4 cup maple syrup or honey
  • 1 teaspoon baking soda
  • 2 cups rolled oats
  • Chocolate chips optional

Method
 

  1. Preheat oven to 200°C. Put a piece of parchment paper into a 21cm loaf tin
  2. Toss all ingredients in a blender and blend until smooth. If using, mix chocolate drops into the dough (don’t blend). Pour batter into prepared loaf pan.
  3. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  4. Let loaf cool completely before taking out of the pan. Store bread in an airtight container on the counter for 2-3 days or in the refrigerator for up to a week.
