Ingredients

  • 400 g ground turkey or chicken
  • 1 large egg
  • 1 medium zucchini
  • 2 green onions - thinly sliced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 3-4 tbsp olive oil
  • 1/2 cup grated mozzarella
  • salt and pepper

Method

  1. Coarsely grate the zucchini into a large mixing bowl. Add 1 tsp of salt and let sit for 5 mins. Then squeeze out the excessive liquid and pat with kitchen towel if needed. The result should be as dry as possible.
  2. Mix together the shredded zucchini, ground turkey, egg, green onion, cheese (if using) and spices. Season with freshly cracked black pepper and a pinch of salt. Divide the mixture into equal portions and then form patties of preferred size and shape.
  3. Heat a large pan over medium-high heat. Add a few glugs of vegetable oil to the pan, just enough to coat the surface. Cook the burgers until golden brown on both sides and cooked through. About 3 minutes per side. Let rest for 3-5 minutes before serving.
  4. Serve with rice and salad or in a sandwich. Taste fabulous when cold as well.
