Caesar with a Twist

Ingredients
  

Base
  • 2 pcs chicken breast
  • 1 romaine lettuce
  • 1 cup croutons
  • 2 eggs hard boiled
  • 1/2 cup parmigiano reggiano cheese chopped
  • salt and pepper
Dressing
  • 1 cup wild garlic fresh or frozen
  • 1 egg yolk
  • 1/4 cup parmigiano reggiano cheese shredded
  • 2 tbsp lemon juice
  • 1 tsp dijon mustard
  • 1/4 cup olive oil
  • salt and pepper

Method
 

  1. Cut the chicken into pieces, season with salt and cook in 1 tbsp oil.
  2. Cut old bread into cubes, sprinkle with olive oil, season with salt. Bake on a try in an oven or air fryer until golden and crispy.
  3. Cut the lettuce, then mix with chicken and croutons.
  4. Blend all dressing ingredients, then season with salt and pepper to taste.
  5. Pour the dressing over the lettuce, chicken and croutons mix, add egs cut to quarters, then sprinkle chopped cheese. VoilĂ !
