Asian Red Cabbage Peanut Butter Salad

Ingredients
  

Base
  • 4 cups red cabbage handcut or shredded to thin slices
  • 200 g edamame beans
  • 1 carrot cut to thin sticks or shredded
  • 1 spring onion cut to slices
  • 2 tbsp sesame seeds
Dressing
  • 1 tbsp peanut butter crunchy
  • 1 tbsp tahini
  • 1 tbsp soy sauce or tamari
  • 3 tbsp lemon juice
  • 1 tsp chilli flakes
  • 1 tsp ground ginger

Method
 

  1. Prepare the dressing: whisk all ingredients together and add water to get a creamy sauce.
  2. Chop the veggies - I prefer chopping over shredding - the fun part of this salad is the crunchiness!
  3. Mix everything togehter and voilĂ !

Notes

This salad is very versatile and can be served as a main or a side dish.
Need more protein? Add pan fried tofu. More carbs? Quinoa or rice noodles work perfectly!
