Ingredients
  

Meat
  • 500 g thinly sliced beef beef chuck, flank, tenderloin, ribeye, or sirloin
  • 1 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar or your sweetener of choice
  • 1 tbsp neutral oil sunflower or rapeseed
  • 1 tbsp minced garlic
  • 1 yellow onion peeled and cut into wedges
Assembly
  • 400 g package vermicelli rice noodles medium or thin size
  • 1 small lettuce shredded
  • 1 cucumber chopped in matchsticks
  • 2 medium carrots chopped in matchsticks
  • 2 handfuls crushed peanuts
Dipping sauce
  • 3 tbsp light soy sauce
  • 1 tbsp lime juice
  • 1 tbsp water
  • 1 tsp sugar
  • soy sprouts optional

Method
 

  1. Make the dipping sauce in advance. Cover with cling wrap and set aside until needed.
  2. Combine all the marinade ingredients in a bowl. Mix in the beef strips and set aside (10-15 mins)
  3. Prep the vegetables.
  4. Cook your rice noodles as directed on the packaging and leave it in a strainer until needed.
  5. Bring a large fry pan or skillet to high temperature. Add 1 tbsp of oil and flash fry the beef strips until medium/medium-rare.
  6. In each bowl, place the rice noodles in first and then all the toppings on top. Pour the dressing over the top and finish with crushed peanuts.

Simple as it is, this is a very solid and balanced performance meal, ideal for lunch or dinner on a busy training day. If you want it lighter, halve the peanuts; if you want it more recovery-focused, keep it as is or add a bit more lean beef.
