Summer Halloumi & Nectarine Salad

Ingredients
  

Base
  • 1 halloumi or paneer
  • 2 medium nectarines hard to medium ripe
  • 3 cups mixed lettuce of choice
  • 2 tbsp roasted almonds
  • 1/2 red onion thinly sliced
  • salt and pepper to taste
Dressing
  • 2 tbsp olive oil
  • 1 tbsp white vinegar
  • 1 tsp honey
  • 2 tbsp orange juice

Method
 

  1. Cut the halloumi in small cubes, sprinkle with salt and squeeze some lemon juice on top. Pan fry in a bit of oil (no need to use oil when using a grill pan).
  2. Cut the nectarine and onion in thin slices.
  3. Roast the almonds in a bit of oil until goldenm sprinke with salt.
  4. Prepare the vinaigrette by blending all wet ingredients.
  5. Serve with a fresh baguette.
