Summer Chicken & Peach Salad

Ingredients
  

Base
  • 2 pcs chicken breast
  • 6 halves canned peaches
  • 50 g white cheese emmentaler of edam
  • 1 small kohlrabi (cabbage turnip)
  • 1 handful almonds chopped
  • salt and pepper
  • 1 celery stick
Dressing
  • 200 g plain yoghurt
  • 2 tbsp lemon juice

Method
 

  1. Season the chicken with salt and pepper and cook in a pan. Once cooled down, cut to small pieces.
  2. Cut all the veggies and peaches (small cubes).
  3. Mix the yogurt with lemon juice, salt and pepper.
  4. Whisk everything together in a large salad bowl, then sprinkle with chopped almonds. Season to taset with salt and pepper.
