Easy Chicken Stir Fry

Ingredients
  

Chicken marinade
  • 400 g chicken breast thinly sliced
  • 1 tbsp cornstarch
  • 1 tbsp tamari
Wok
  • 1 tbsp vegetable oil
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 medium onion sliced
  • 60 g raw cashews
  • 2-3 tbsp tamari
  • 1 tsp honey or maple syrup optional
Side
  • 150 g rice
  • Sesame seeds for topping

Method
 

  1. Marinate the chicken in tamari and cornstarch.
  2. Heat a wok or large pan until hot. Add oil.
  3. Sear chicken in a single layer. Cook quickly until just done. Remove from pan.
  4. Add onion and bell peppers. Stir-fry 3–4 minutes until crisp-tender.
  5. Add cashews, return chicken to the pan.
  6. Add remaining tamari, and optional honey. Toss over high heat 30–60 seconds until glossy.
  7. Spoon over rice, finish with sesame seeds.
