Easy Banana Pancakes

Ingredients
  

  • 2 ripe bananas mashed
  • 4 large eggs
  • ½ cup whole wheat or buckwheat flour alternatively ⅔ cup oat flour
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • vegetable oil for spraying the pan

Method
 

  1. In a bowl, whisk together the mashed bananas with eggs.
  2. Add the flour and the rest of dry ingredients.
  3. Heat a large nonstick pan over medium heat. Spray with oil.
  4. Pour 3-4 circles of batter into the pan. Cook until puffed on top and golden brown on the bottom, ca. 2-3 minutes, then flip and cook on the other for 1-2 minutes more. Makes 8 pancakes.
  5. Serve with banana slices, nuts and maple syrup or jam of choice.
