Ingredients
Method
- In a bowl, whisk together the mashed bananas with eggs.
- Add the flour and the rest of dry ingredients.
- Heat a large nonstick pan over medium heat. Spray with oil.
- Pour 3-4 circles of batter into the pan. Cook until puffed on top and golden brown on the bottom, ca. 2-3 minutes, then flip and cook on the other for 1-2 minutes more. Makes 8 pancakes.
- Serve with banana slices, nuts and maple syrup or jam of choice.
